  • 1 lbs Ground Elk Meat

  • 1/2 Package of Lasagna Noodle

  • 3 Cup Tomato Sauce

  • 2 Garlic Cloves, Chopped

  • 2 Whole Egg

  • 1 Medium Sweet Onion, Chopped

  • 2 Tablespoons Olive Oil

  • 2 lbs of Ricotta Cheese

  • 1 Cup Parmesan Cheese

  • 1/2  lbs Sliced Mozzarella 

DIRECTIONS: Preheat oven to 400 Degrees. Cook lasagna noodles according to instructions on package. Heat skillet and add olive oil. Saute chopped onion and garlic cloves. Add ground elk meat to skillet and cook until browned. In a bowl add tomato sauce and elk meat and mix. In a separate bowl add ricotta, 3/4 cup Parmesan, 2 eggs, and mix well. In a pan or skillet add a layer of meat sauce, layer with lasagna noodle, top with cheese mixture, and a few slices of mozzarella. Repeat layers until all of the ingredients are used up. Cover the lasagna with tin foil and bake in oven for 30 min. Remove from oven and top lasagna with the remaining Parmesan cheese. Bake for another 10 min, until the lasagna starts to bubble. Remove from oven and let sit for 10-15 min. Then enjoy!
